Why Class 800 and not Class 300 for small valves?

Because forged small-bore valves are made to a standard body thickness and Class 800 is the economical result — a Class 300 forged valve in half-inch would cost much the same. It also means the valve is comfortably over-rated for most steam and hydraulic duty, which is exactly what you want on a line nobody will inspect for ten years.

Screwed or socket weld?

Screwed is quicker and can be dismantled with two spanners, which suits instrument and utility connections. Socket weld gives a permanent leak-tight joint and is the norm on steam, thermic fluid and hydraulic lines, and is mandatory on many process specifications. If the line is insulated and inaccessible, socket weld is the safer choice.
